Banana Chocolate Chips Muffin

I'm sure this time they can be called muffins...

So happened mum bought some bananas a few days ago. And I've bought these new muffin paper cups which look too cute to be left aside in the cupboard. Finally, I do want to confirm a banana muffin recipe so I can "move on". (Carebear, the paper cups are good enough without the muffin trays actually - you can see from the picture that they were not supported by the tray)

I didn't try any after I baked them, too full. Will try one for breakfast tomorrow morning perhaps. The fact that the muffins had risen very well, I already liked this recipe. I leave it to the tasters to come back with the feedback.

The recipe made 12 which is just the good portion for tea-time bake. Mum bought Pisang Rastali which was different from those I normally got at the supermarket. I would expect them to give better aroma actually. And no banana essence added but added chocolate chips just to be "safe" - so that they could some how also please the chocoholic.

Thought the cupcakes were rather dull, so glazed them with honey to add some shine. However, I wouldn't expect the honey to give much aroma since it's just the Giant brand honey. Nonetheless, I think I could still get the effect - which I hope will last.

Recipe Failure - Banana and Raisin "pudding"

This weekend I'd baked a jar of double chocolate cookies (remaining cookie mix from last week), a jar of almond chocolate chips biscotti and some banana and raisin "muffins".

I've got a habit of improvising (i.e. changing) recipes most of the time (most of the time, not all the time :p). So today, in one of those mood, I've experimented with some variation. It didn't turn out well actually - something I'd call a "recipe failure". Logically, the miscellaneous ingredients shouldn't be bigger portion then the base cake mixture. But, this is one recipe where there were too much banana. So the muffins didn't turn out as "cakes" (fluffy) but turn out more like "pudding" (too dense and moist, no "cake").

See...

Text-ed LGM, my faithful banana-related-recipe taster, and told her no cake-tasting since it's a failure. But my dear friend is kind enough to want to give it a go. BUT please remember you've promised to throw them away if they taste yucky.

Carebear - I've got some biscotti for you. I hope you don't mind having them - Your morning coffee break snack. And welcome back. Will we be tortured in tomorrow's pump? LOLz...

Blueberry Chocolate Chips Muffin

I made these because of 2 reasons:

1) I was making TD's order and there were a bit of extra cake mixture. So I don't want to waste them;

2) I had some blueberries out from the can for a week, need to use them before they turn bad.

(I still have some fresh cream in the fridge which I urgently need to use!)

Since this is a random baking and no reference to any recipe, I wanted to know if I've put in enough blueberries and chocolate chips. So I cut one up to "inspect".

I think they could do with more blueberries. MC said it was okay.
